L O V E. H E A R T ❤️ earlier this year my ama L O V E. H E A R T ❤️ earlier this year my amazing sister @sashahardingartist had a heart transplant. It was an incredibly traumatic time whilst also being a totally miraculous time, and the whole thing is still blowing my mind. The care she received at the Queen Elizabeth hospital in Birmingham was nothing short of extraordinary, the doctors and nurses were (and still are through her recovery) astounding. We are so lucky to have the #nhs ❤️ I want to give something back in which ever way I can to say thank you for looking after my sister and nursing her back to health. So I have signed up to do a half marathon in March next year (plenty of time to train, I am not a runner!), to raise money for the hospital and in particular to go towards a new building for transplant patients. 
Today is my first run in a few years… so here we go!! 🏃🏼‍♀️ 
Nearer the time I will pop on the details of how to donate. But for now I will try my hardest not to become a running bore 😬🥰

A lovely salad recipe to save for spring – shaved A lovely salad recipe to save for spring - shaved fennel, courgette, dill & capers and almonds browned in butter. Topped with @willysacv turmeric & black pepper apple cider vinegar & extra virgin olive oil …so simple and fresh.

A little fact about why turmeric & black pepper are a good combination - the piperine in black pepper helps absorption of the curcumin in turmeric (curcumin has antioxidant and anti inflammatory properties) ✨

P A N C A K E S 💙 good morning! I have posted t P A N C A K E S 💙 good morning! I have posted this recipe before, but posting again as a reminder to make these on tues (or any day, we often have these for a weekend breakfast) - especially if like me, you aren’t that partial to a crepe 🫣. These are great for breakfast as they are full of protein. I topped ours with baked nectarine, blueberries and raspberries, Greek yoghurt, a drizzle of maple syrup and almonds. SO good 

Recipe 👇🏻 (serves 2) 
✨Ingredients:
1 ripe banana
2 free-range eggs
1 tbsp milk
80g oats
1 tbsp baking powder
50g dark chocolate chips/chopped chocolate (optional)
Coconut oil (we sometimes use olive oil if no coconut oil)

✨To serve:
Any fruit of your choice
Maple Syrup/ honey
Chopped nuts 
Full fat Greek yoghurt 

✨Directions:
•Pop banana, milk, eggs, oats and baking powder in bowl and blitz with hand blender til smooth and creamy (or use a blender)
•Stir in choc chips if using
•Put large non stick frying pan on medium heat and add a splash of oil
•When the oil is hot, place 2 tbsp of mixture per pancake into pan at a time and cook for a min or 2 on each side until golden. You should be able to make around 6 pancakes.

Lunch inspo 👀 this is a great 5 min lunch when Lunch inspo 👀 this is a great 5 min lunch when you haven’t got much time. Pop a pack of tortolleni on to boil, and add peas and asparagus.. whilst that’s cooking chop up any salad bits you have in the fridge, this is good for using up bits of veg. Drain pasta and add all the veg. Make a simple dressing with 3 x tbsp olive oil, 1x tbsp apple cider vinegar (I used @willysacv), 1x tsp garlic granules and a tsp mustard - add to salad and mix it all up. DELISH and a great way to eat lots of plants 🫑🥑🥒🥬
Great for a packed lunch too 👍🏻

L U N C H I N S P O 🌶️ Miso marinated tofu w L U N C H  I N S P O 🌶️ Miso marinated tofu with raw chopped salad, quinoa and a cashew dressing. OMG. This was so tasty! Inspired by the most delicious salad at @atisfoodldn that I often get on my weekly day in London. I thought I would give it a go and recreate at home. Try this, it requires a teeny bit of prep but then it’s super quick, full of nutrients, high in protein and my husband said it’s the most delicious salad I have ever made 😊😇 
For the miso tofu:
1 x block extra firm tofu
2 x tsp fresh grated ginger
2 x cloves garlic, crushed
1 x tsp chilli flakes (optional)
2 x tbsp tamari/ soy sauce
2 x tbsp rice wine vinegar
2 x tbsp miso paste 
1 x tbsp sesame oil
-mix marinade ingredients together and add the tofu.. marinade for 2 x hours if possible or overnight. 
- bake tofu for 20 mins in oven at 160

Cashew dressing:
Whizz up 1/2 cup cashews, 1/2 cup water, 1/2 cup coriander, 1 x tbsp lemon juice, 1 x small clove garlic 1x tbsp  tamari / soy sauce in a blender.

Salad - raw Cavolo Nero, sweetheart cabbage, cucumber, spring onions, red pepper, pre-cooked quinoa (I used @merchantgourmet) - chop it all up, mix the dressing through and top with the miso tofu. I meant to add peas and sesame seeds too but forgot! 😬. Edamame would be nice too!

M I S L E A D I N G L A B E L S 🤔 This looks l M I S L E A D I N G  L A B E L S 🤔 This looks like it’s a lovely hummus made PREDOMINANTLY from olive oil. WRONG. My husband came home with this, feeling very pleased with his choice, understandably - the clever label suggests this is a good option. On the front it says it’s made with olive oil, and again on the back. So far so good… so me being me had a look at the actual ingredients and noticed that actually it’s made predominantly of sunflower oil (which is inflammatory and cheaper to use). 

This is such a good example of clever marketing and misleading labels. The ingredients have to be listed on order of the biggest amount to the smallest amount, and in this case there is more sunflower oil than olive oil. M&S, knowing that sunflower oil isn’t great, have decided to fool us using the label. URGH. A note to always check the BACK of the label, and the ingredients list if you are being conscious of what you are consuming. 

Rant over. I just wanted to share this as I find labelling very interesting!! 🤓 

Here is a lovely hummus recipe:
1 x can chickpeas
1 x clove garlic
60ml cold water
3 x tbsp tahini
1 x tbsp olive oil
Juice 1 x lemon

Rinse the chickpeas, blend with the water, add the rest of the ingredients and whizz up. If too think add a bit more water until you get the right consistency. Voila! 5 mins. Easy. 🫒

I am always thinking of what I can ADD to my meals to ramp up the nutrient content - I had some leftover quinoa from supper last night, so added 20g of that to 20g of oats (instead of my usual 40g oats) and cooked for 5 mins with some cashew milk. Tasted so lovely and increased the protein in my breakfast. 

⭐️Quinoa is a full protein, meaning it contains all 9 essential aminos acids that we need to get from food, so a good food to include in your diet.

Thought I might as well do a reel… bare with the not so great quality, I am still learning. This is a great healthy dish for a crowd, or to batch cook for lunches / suppers during the week ❤️
Clients often ask me what makes a good sweet snack Clients often ask me what makes a good sweet snack option - so I hopped on the date bark bandwagon to see what the fuss was about before recommending 🙌 - this is such a good sweet snack - full of protein, healthy fats and magnesium and super simple to make - I added in a bit more of a variety of nuts and seeds for extra plant points. I think chopped hazelnuts would be pretty good in this too. Let me know if you make it! A great after supper snack or after school snack for the kids. Yum. 😍

Homemade pesto 😋 I am obsessed with making home Homemade pesto 😋
I am obsessed with making homemade pesto! It’s so much better for you than buying from the supermarket - my recipe uses extra virgin olive oil rather than sunflower oil (which can be inflammatory), and only a couple of other ingredients. Try it, it takes 5 mins and tastes so good 😊. Great way to get some dark leafy greens into my fussy son which is an added bonus!
Ingredients:
200g baby spinach
1 x handful basil
30g Parmesan
30g pine nuts
1 x garlic clove
Juice of half a lemon
Big pinch salt
3 x tbsp extra virgin olive oil 

Method - whizz all ingredients up with a hand blender - taste and add more seasoning if necessary. Done? Y u m 

You can swap spinach for kale or pine nuts for walnuts 😍

Simple delicious full of flavour and goodness! I j Simple delicious full of flavour and goodness! I just recreated the gorgeous pasta dish we had in Greece. It smells divine - looking forward to digging in this evening. Great for a summer bbq/quick supper/lunch - recipe below (for 2)
150g wholewheat pasta
2 large handfuls cherry tomatoes 
1 x clove garlic
1 x small handful feta
1 x handful basil
1 x tbsp extra virgin olive oil (mine was infused with garlic to make the dish extra garlicky!)
🍅Directions:
Boil up the pasta and then when cooked cool with cold water. 
Chop the tomatoes really small, pop in bowl, add a sprinkle of salt and olive oil and stir up. Grate the garlic so it’s almost a paste and stir in. Add the basil and feta and let it sit whilst the pasta is cooking. When the pasta is cool mix it all up. Enjoy!
